I've had a few iterations of this dressing combination at restaurants and have been itching to make my own. So with Peachy Keen Nutrition's food of the month being carrots, I decided it was time.
This dressing is an excellent way to get in some raw veggies. It's also thoughtfully created to obtain maximum nutritional benefits from its ingredients. Carrots are a great source of vitamin A/beta-carotene and the fat in the olive oil helps the body to absorb this fat soluble nutrient.
The Carrot Miso Ginger Dressing is zesty, bright, fresh and aromatic. I think you're going to love it.

Ingredients:
1 cup chopped raw carrots
1 tablespoon chopped fresh ginger
1 tablespoon olive oil
1 tablespoon apple cider vinegar
1/4 cup water
1 teaspoon red miso paste
Instructions:
Combine all ingredients in high power blender
Blend until smooth!
Notes:
Storage: keep in the refrigerator for up to 4 days for best freshness
Miso paste: if you can't find red miso paste, any miso paste will do!
